At the beginning of the year I set myself several challenges. One was to cook a recipe from every copy of Good Food magazine this year. For January I picked the Mexican chicken stew with rice & beans.
How it did look!It was a fairly easy recipe. My only alteration was using left over roast chicken whereas the recipe suggested chicken breasts which you then shred. It was fairly hot which I like and the yogurt worked well to reduce the heat. It's definitely a recipe I would do again.
